Ayam taliwang: Lombok's fiery grilled chicken

Your Lombok list says to order it, and you wonder how hot it will be.

IndonesiaQuest Editorial · Updated 20 October 2026

Ayam taliwang is a spicy grilled chicken dish from Lombok, named after Karang Taliwang, a neighbourhood in the island’s capital Mataram [1]. Think of it as Lombok’s answer to a smoky, chilli-heavy grilled chicken. Order it with the heat level your group can handle.

How is ayam taliwang made?

The chicken is partly grilled, pounded with a pestle, briefly dipped in oil and coated in a sauce of garlic, chilli and shrimp paste [2]. It is then fried or grilled again to order. The pounding is what lets the sauce reach the meat.

Cooks traditionally use young village chicken, which is smaller and leaner than farm chicken. The result is smoky, savoury and spicy, with a little sweetness behind the heat.

What comes with it?

The classic side is plecing kangkung, blanched water spinach in a spicy chilli sauce, plus steamed rice [3]. Beberuk, a chopped eggplant side with chilli sauce, also turns up on some plates. Order a sweet drink or plain rice for balance.

How do you control the heat?

Heat can be adjusted [3]. Say “tidak terlalu pedas” for not too spicy, or ask the cook for the sauce on the side. Children and grandparents tend to prefer the milder plate, so it helps to order one mild portion and one regular for the adults.

What should Malaysians check before ordering?

The sauce contains shrimp paste, so ask if anyone in your group has a shellfish allergy. For halal assurance, look for the BPJPH label on the shopfront and read the BPJPH explainer. Ask the stall about shared oil if that matters to you.

Our halal vs Muslim-friendly explainer sets out what those words mean on a menu. Ask the agency for a meal-by-meal list when you request a quote.

Where does it fit in a Lombok trip?

Mataram is the island’s capital, so one dinner there fits a day when you pass through the city. The Lombok page shows the wider island, and the first-timer Lombok guide helps you choose bases. Our food hub lists the other Indonesian dishes worth knowing.

Questions Malaysians ask

Is ayam taliwang very spicy?

It can be, but the heat can be adjusted. Ask for tidak terlalu pedas to lower it, or request the sauce on the side. Order a milder portion for children and older relatives, and balance the plate with plain rice and a cool drink.

Is ayam taliwang halal?
